Chicken Fajita Quesadillas

  • 3 chicken breasts or rotisserie chicken
  • 2 T fajita seasoning
  • 2 onions, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • shredded Mexican blend cheese
  • 2 T butter
  • tortilla shells
  • olive oil
  • sour cream for serving
  • salsa for serving
  1. Season chicken with 1 T fajita mix.
  2. Cook chicken.
  3. Add 1 T olive oil to large skillet and heat.
  4. Add onion and cook until translucent.
  5. Add peppers and fajita mix and mix well.
  6. Cook a few minutes.
  7. Add chicken, mix, and cook another minute.
  8. In clean skillet add butter and tortilla shell or use quesadilla maker.
  9. Add chicken and onion mixture and ~1/4 c cheese.
  10. Serve with sour cream and salsa.

Notes:

  • Made on 2023-07-04 with ~1/2″x1.5″ pepper slices. I’m not sure if the pepper slices were too large or too small, but they were a slightly inconvenient size for eating.
