- 3 chicken breasts or rotisserie chicken
- 2 T fajita seasoning
- 2 onions, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- shredded Mexican blend cheese
- 2 T butter
- tortilla shells
- olive oil
- sour cream for serving
- salsa for serving
- Season chicken with 1 T fajita mix.
- Cook chicken.
- Add 1 T olive oil to large skillet and heat.
- Add onion and cook until translucent.
- Add peppers and fajita mix and mix well.
- Cook a few minutes.
- Add chicken, mix, and cook another minute.
- In clean skillet add butter and tortilla shell or use quesadilla maker.
- Add chicken and onion mixture and ~1/4 c cheese.
- Serve with sour cream and salsa.
Notes:
- Made on 2023-07-04 with ~1/2″x1.5″ pepper slices. I’m not sure if the pepper slices were too large or too small, but they were a slightly inconvenient size for eating.
