- 5 medium overripe bananas
- 1/4 vegetable oil or melted coconut oil
- 2 eggs
- 2 t vanilla extract
- 1 3/4 c whole wheat flour
- 1 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t kosher salt
- 1 t cinnamon
- Optional:
- More cinnamon, nutmeg, nuts, raisins, chocolate chips
- Preheat oven to 325F.
- In a large bowl, combine bananas, oil, eggs, and vanilla extract. Whisk until well combined.
- Add flour, baking soda, baking powder, salt cinnamon, and any other mix-ins. Stir just until combined.
- Spray bread loaf pan and pour in batter.
- Bake 60-75 minutes or until toothpick comes out clean.
- Cool for 10 minutes then transfer to wire rack.
- Cool another 15-20 minutes before slicing.
