- 1 1/4 c all-purpose whole-wheat flour
- 1 t baking soda
- 1/2 t salt
- 2 large eggs, room temperature
- 1/2 t vanilla extract
- 1/2 c butter, room temperature
- 1 c sugar
- 3-4 overripe bananas, peeled and mashed
- 3/4 cup walnuts
- Whisk flour, baking soda, and salt together in one bowl.
- Whisk eggs and vanilla together in a second bowl.
- Preheat oven to 350F.
- Mix butter and sugar in a third bowl. Pour egg mixture into butter while mixing. Add bananas.
- With spatula, mix in flour mixture until evenly mixed in.
- Mix in walnuts.
- Spray loaf pan and transfer mix to it.
- Bake 55-60 minutes until toothpick inserted in middle comes out clean.
