Black Bean Taquitos

  • 4 oz cream cheese (softened)
  • 15 oz black beans
  • 4 oz can diced green chilis
  • 2 green onions
  • 2-3 dashes hot sauce
  • 1/8 t garlic powder
  • 1/8 t salt
  • 15 6″ tortillas
  • olive oil
  • serve with sour cream and hot sauce
  1. Rinse and drain black beans.
  2. Drain diced green chilis.
  3. Slice green onions.
  4. Add the cream cheese, black beans, green chiles, green onion, hot sauce, garlic powder, and salt to a bowl. Stir together until evenly combined.
  5. Spread mix into tortillas.
  6. Coat tortillas with oil.
  7. Bake at 400F for 15 minutes.

Notes:

  • It worked well to put two corn tortillas in the tortilla warmer for 14 seconds to heat them up so they would roll better without breaking apart.
