Black Bean Burgers

  • 15 oz black beans
  • 1 T olive oil
  • 2 cloves garlic, minced
  • 1/4 c red onion, diced
  • 4 oz mushrooms, cleaned and chopped
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 large egg, whisked
  • 2/3 c bread crumbs
  • 1 t chili powder
  • 1 t onion powder
  • 1 t ground cumin
  • 1 t dried oregano
  • 1 t salt
  • 1/4 t ground black pepper
  1. Cook black beans (if not using canned), mash up with fork.
  2. Saute onions, peppers, and mushrooms for 3-5 minutes.
  3. Add salt, pepper, and garlic and cook 2 minutes.
  4. Combine black beans, cooked veggies, bread crumbs, egg, and spices.
  5. Form into patties.
  6. Oil and grill 5-6 minutes per side.
