Soup – Split Pea

  • 3/4 red onion, diced
  • 2 carrots, chopped
  • 1 stalk celery, chopped
  • 4 cloves garlic, chopped
  • 1/2 t thyme powder
  • 32 oz low sodium / unsalted vegetable broth
  • 2 c water
  • 16 oz dried split peas
  • 3/4 t salt
  • 1/2 t black pepper
  • 1 bay leaf
  1. Saute (medium) onion, carrots, and celery in pot, stirring for 5 minutes.
  2. Add garlic and thyme and saute 1 more minute.
  3. Add broth, water, split peas, salt, pepper, and bay leaf and mix well.
  4. Pressure cook on high for 8 minutes.
  5. Let sit / natural release for 10 minutes, then stir.

This turned out great. I tried reducing the amount of salt but unfortunately found that it really did need the salt. I also added more pepper and that was better as well.
