Apple Pie

Crust

  • 1 1/4 c flour
  • 1/2 t sugar
  • 1/4 t salt
  • 1/2 c butter (chilled/grated)
  • water

Combine ingredients except water. Add water 1 T at a time until dough sticks together. Cover in plastic wrap and put in fridge overnight.

Filling

  • 5-6 medium apples
  • 1/2 c white sugar
  • 1/4 t salt
  • 1/2 c brown sugar
  • 5-6 T flour
  • 1 t cinnamon

Mix in all ingredients except apples in a large bowl. Wish, peel, and slice apples and add them to flour mixture. Mix. Place in pie crust.

Crumble Topping

  • 1/2 c white sugar
  • 3/4 c flour
  • 1/2 c butter

Mix sugar and flour together. Mix in butter with pastry blender (without a pastry blender I used a regular blender to break up the butter and then mixed the rest by hand). Carefully pour topping on pie filling.

Bake at 400F for 45 min.

Notes:

  • Made on 2019-10-06 with 2 Ida Red, 2 Spy, and 2 Empire. It was overall very good but a little tart.
  • 2022-10-02: 2 empire, 2 cortland, 2 golden delicious, and 1 honeycrisp spread over two pies, one gluten free graham cracker crust and one homemade crust. Could have used another 1-2 apples to fill them out a little bit more. For the two pies, I increased the crumble topping amounts by 50% and that was good. I also used gluten free flour for the apple mix and crumble topping mix and that was fine as well. Added homemade crust recipe which turned out good. I did use frozen butter stick and grate it with cheese grater. But it was sticky and messy and I wonder if that is really necessary.
  • 2023-02-26: Made with gluten free flour, a gluten free pie crust mix, 2 gala, 2 golden delicious, 1 granny smith, and 1 pink lady. It was probably one apple more than needed. Adjusted recipe down to 5-6 apples instead of 6-7. The crumble topping makes a lot also; I only used about 75% of it.
