- 15 oz can chickpeas, drained, rinsed, and patted dry
- 1/2 c plain breadcrumbs or ground oats
- 2 large eggs
- 1/4 c fresh parsley leaves
- 2 T nutritional yeast or grated Parmesan cheese
- 2 t Italian seasoning
- 1 t black pepper
- 1 t garlic powder
- 3/4 t smoked paprika
- 3/4 t kosher salt
- Combine all ingredients in food processor and blend until mostly smooth.
- Roll into 14 balls.
- Bake at 375F for 18-20 minutes turning over half way through.
