Vegetarian Meatballs

  • 15 oz can chickpeas, drained, rinsed, and patted dry
  • 1/2 c plain breadcrumbs or ground oats
  • 2 large eggs
  • 1/4 c fresh parsley leaves
  • 2 T nutritional yeast or grated Parmesan cheese
  • 2 t Italian seasoning
  • 1 t black pepper
  • 1 t garlic powder
  • 3/4 t smoked paprika
  • 3/4 t kosher salt
  1. Combine all ingredients in food processor and blend until mostly smooth.
  2. Roll into 14 balls.
  3. Bake at 375F for 18-20 minutes turning over half way through.
