Salmon Burrito Bowl

  • Salmon marinade
    • 1 lb salmon
    • 1/4 c olive oil
    • 2 T chicken broth
    • 2 T lime juice
    • 1 T minced garlic
    • 1 t salt
    • 2 t cumin
    • 2 t paprika
    • 1/4 t chili powder
    • 1/2 t oregano
    • 1/4 t red pepper flakes
  • Vinaigrette
    • 1 c cilantro
    • 1 shallot
    • 1 t minced garlic
    • 1/3 c olive oil
    • 2 T lime juice
    • 2 T water
    • 1/2 t red pepper flakes
    • 1/2 t salt
  • Bowls
    • 1 can black beans, drained and rinsed
    • 1.5 c corn
    • 1 avocado
    • 2 c cilantro lime rice
    • 1 c pico de gallo
  1. Cut salmon and marinade for 1+ hour in fridge.
  2. Blend vinaigrette ingredients and cool in fridge.
  3. Bake salmon (375F, 15 min).
