- Salmon marinade
- 1 lb salmon
- 1/4 c olive oil
- 2 T chicken broth
- 2 T lime juice
- 1 T minced garlic
- 1 t salt
- 2 t cumin
- 2 t paprika
- 1/4 t chili powder
- 1/2 t oregano
- 1/4 t red pepper flakes
- Vinaigrette
- 1 c cilantro
- 1 shallot
- 1 t minced garlic
- 1/3 c olive oil
- 2 T lime juice
- 2 T water
- 1/2 t red pepper flakes
- 1/2 t salt
- Bowls
- 1 can black beans, drained and rinsed
- 1.5 c corn
- 1 avocado
- 2 c cilantro lime rice
- 1 c pico de gallo
- Cut salmon and marinade for 1+ hour in fridge.
- Blend vinaigrette ingredients and cool in fridge.
- Bake salmon (375F, 15 min).
