Spinach Mushroom Gnocchi

  • 8 oz mushrooms
  • 16 oz gnocchi
  • 1/2 c chicken broth
  • 1 c heavy cream
  • 4 cloves garlic, minced
  • 1/2 t Italian seasoning
  • 1/2 t smoked paprika
  • 5 oz fresh spinach
  • salt to taste
  • coarsely ground black pepper to taste
  • red pepper flakes to taste
  1. Cook mushrooms in oiled skillet. Season with salt and pepper. Keep separate if desired.
  2. Add gnocchi, chicken broth, heavy cream, minced garlic, Italian seasoning, smoked paprika, and 1/4 t salt.
  3. Bring to boil on medium heat and stir.
  4. Cover and cook 5 minutes while sauce boils.
  5. Add spinach, cook, and stir 5 minutes until spinach wilts.
  6. Top with mushrooms, black pepper, red pepper flakes.
