- 1/2 T olive oil
- 1/2 medium onion, chopped
- 1 stalk celery, chopped
- 1 clove garlic, minced
- 8 oz smoked salmon, flaked
- 1 can (15.5 oz) great northern beans with liquid
- 1 can (15.5 oz) cannellini beans, rinsed
- 8 oz chicken broth
- 1 Anaheim pepper (braised, then seeds and skin removed), diced
- 1/2 t ground cumin
- 1/2 T ground coriander
- 1/2 t dried oregano
- 1/2 T lemon pepper seasoning
- 1 pt heavy whipping cream
- Braise Anaheim pepper for about 30 minutes, then remove seeds and dice.
- Heat olive oil in large pot over medium heat.
- Saute onion, celery, and garlic until tender.
- Add salmon, beans, broth, Anaheim pepper, and spices.
- Bring to a boil.
- Reduce heat and simmer until flavors blend, about 30 minutes.
- Stir in whipping cream.
- Simmer until whipping cream is hot but do not boil.
