Banana Walnut Bread

  • 1 1/4 c all-purpose whole-wheat flour
  • 1 t baking soda
  • 1/2 t salt
  • 2 large eggs, room temperature
  • 1/2 t vanilla extract
  • 1/2 c butter, room temperature
  • 1 c sugar
  • 3-4 overripe bananas, peeled and mashed
  • 3/4 cup walnuts
  1. Whisk flour, baking soda, and salt together in one bowl.
  2. Whisk eggs and vanilla together in a second bowl.
  3. Preheat oven to 350F.
  4. Mix butter and sugar in a third bowl. Pour egg mixture into butter while mixing. Add bananas.
  5. With spatula, mix in flour mixture until evenly mixed in.
  6. Mix in walnuts.
  7. Spray loaf pan and transfer mix to it.
  8. Bake 55-60 minutes until toothpick inserted in middle comes out clean.
