- Buttermilk ingredients
- 3/4 t vinegar (in 1/4 c measurer)
- rest of 1/4 c milk
- Dry ingredients
- 2 c flour
- 3/4 c sugar
- 3/4 t baking soda
- 1 t cinnamon
- 1/2 t salt
- Wet ingredients
- 1 1/2 c mashed overripe bananas
- 2 large eggs
- 6 T butter, melted and cooled
- 2 t vanilla extract
- Apple ingredients
- 1 cup finely diced apples
- 1 T flour
- Combine milk and vinegar and let sit 5 minutes (buttermilk substitute).
- Preheat the oven to 350F.
- Peel, slice, and dice apple. Mix with 1 T flour to coat apple chunks.
- In a large bowl, whisk together dry ingredients.
- In a medium bowl, whisk together wet and buttermilk ingredients.
- Add the wet ingredients to the dry ingredients and stir to combine.
- Fold apples into bread mix.
- Spray metal bread pan with oil and pour in batter.
- Bake 55-60 minutes.
- Let bread cool 10 minutes then remove to cooling rack.
