- 2 T olive oil
- 2 c bell peppers (any color), diced
- 2 c black beans, rinsed and drained
- 1 c corn
- 1 c onion, diced
- 4 cloves garlic, minced
- 2 t cumin
- 2 t chili powder
- salt and pepper to taste
- 1/2 c cilantro, chopped
- 8 medium tortilla shells
- 4 c shredded cheese
- Innards:
- Heat oil in medium pan over medium-high heat. Add bell peppers, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper.
- Cook 3-4 minutes or until bell peppers and onions are softened.
- Turn off heat and stir in cilantro.
- Tortillas:
- In clean skillet over medium heat add tortilla shell.
- Add a layer of cheese, cooked veggie mixture, another layer of cheese, and a top shell.
- Cook until golden on both sides, ~3 minutes per side.
