- 1 T oil
- 1/2 c onion, diced
- 1/2 T garlic, minced
- 1 bay leaf
- 1/2 red bell pepper, diced
- 1 c (7 oz) dry black beans, rinsed
- 2 c vegetable broth
- Spices:
- 1/2 T ground cumin
- 1/2 T oregano
- 1/2 t paprika
- 1/2 t salt
- 1/2 T lime juice
- 1/3 c cilantro, chopped
- Set pressure cooker to saute mode and add oil to inner pot.
- Add onions, bell pepper, and garlic to the pot and saute for about 3 minutes.
- Add bay leaf and spices.
- Add black beans and vegetable broth and stir to mix well.
- Cancel saute mode, close lid, and set vent to seal.
- Set pot to manual or pressure cook mode on high pressure with 45 minute cook time.
- Let pressure release naturally.
- Gently stir beans.
- Add lime juice and garnish with cilantro.

We made this on 2022-04-24 and it was great. We didn’t have the bell pepper or cilantro but would like to try those next time.
