Black Bean Taco Mix (Instant Pot)

  • 1 T oil
  • 1/2 c onion, diced
  • 1/2 T garlic, minced
  • 1 bay leaf
  • 1/2 red bell pepper, diced
  • 1 c (7 oz) dry black beans, rinsed
  • 2 c vegetable broth
  • Spices:
    • 1/2 T ground cumin
    • 1/2 T oregano
    • 1/2 t paprika
    • 1/2 t salt
  • 1/2 T lime juice
  • 1/3 c cilantro, chopped
  1. Set pressure cooker to saute mode and add oil to inner pot.
  2. Add onions, bell pepper, and garlic to the pot and saute for about 3 minutes.
  3. Add bay leaf and spices.
  4. Add black beans and vegetable broth and stir to mix well.
  5. Cancel saute mode, close lid, and set vent to seal.
  6. Set pot to manual or pressure cook mode on high pressure with 45 minute cook time.
  7. Let pressure release naturally.
  8. Gently stir beans.
  9. Add lime juice and garnish with cilantro.

We made this on 2022-04-24 and it was great. We didn’t have the bell pepper or cilantro but would like to try those next time.
