- 2 gallons of Crane’s Apple Cider
- 2 campden tablets
- 1/4 t yeast nutrient
- 1 t pectic enzyme
- Brewer’s Best cider house select premium cider yeast
2021-09-08
- Sanitized small glass carboy, siphon, and hydrometer.
- Dissolved 2 campden tablets in the 2 gallons of cider in bucket.
- I tried to measure the gravity but didn’t have enough depth in the bucket. I filled the siphon chamber and put the hydrometer in. It read about 1.072. But it was also near the bottom and against the edge, so the reading may not be accurate.
- Racked into carboy.
- Capped the carboy.
2021-09-23
- Sanitized 6 gallon plastic bucket, siphon, air lock, and hydrometer.
- Racked cider from carboy to bucket.
- Poured out bottom sediment from carboy.
- Boiled ~1/2 c water and added yeast nutrient.
- Added yeast nutrient mixture to bucket.
- Added pectic enzyme to bucket.
- Pitched yeast.
- Stirred.
- Racked back into carboy.
- Fitted air lock.
2021-10-17
- Added 3 cinnamon sticks to carboy. Cider is very clear with close to an inch of sediment on the bottom of the carboy.

- I probably could / should have added the cinnamon sticks much earlier, I just thought I would rack out of the carboy but ended up deciding not to.
