- 1 sweet potato
- 1/2 T fresh rosemary
- 1 T olive oil
- 1 t salt
- 1 t pepper
- Cut sweet potato into slices.
- Toss in oil and spice mix.
- Bake at 425F for 25 minutes.
Original recipe called for 1 T fresh rosemary. This seemed a bit much. I also used more oil the first time to get everything coated well.
Yogurt Chive Dip
- 1 c plain almond “yogurt” (or plain greek yogurt)
- 2 T chives
- 1 T lemon juice
- 1/4 t salt
- 1/4 t pepper
- Mix together.
