- 2 lb skinless, boneless chicken breasts
- 1 T olive oil
- 20 oz frozen cauliflower rice
- 16 oz frozen broccoli cuts
- 2 large eggs, whisked
- 3 c shredded mozzarella cheese
- 2 t coarse sea salt
- 1 t garlic powder
- 1 t onion powder
- 2 T butter, melted
- 1 c shredded Italian cheese blend
- Preheat oven to 400F.
- Spray large 3 qt baking dish with non-stick cooking spray or olive oil.
- Slice chicken, coat in olive oil, season with salt and pepper, bake for 20 minutes.
- Heat cauliflower rice and broccoli.
- Remove and cool chicken, chop.
- In large bowl, toss together cauliflower rice, broccoli, chicken, eggs, mozzarella cheese, salt, garlic powder, onion powder, and butter.
- Transfer to baking dish and top with Italian cheese blend.
- Bake for 50 minutes, until cheese is melted and starts to brown.
- Let cool for 10 minutes before serving.
Should try this without chicken.
