- 3/4 red onion, diced
- 2 carrots, chopped
- 1 stalk celery, chopped
- 4 cloves garlic, chopped
- 1/2 t thyme powder
- 32 oz low sodium / unsalted vegetable broth
- 2 c water
- 16 oz dried split peas
- 3/4 t salt
- 1/2 t black pepper
- 1 bay leaf
- Saute (medium) onion, carrots, and celery in pot, stirring for 5 minutes.
- Add garlic and thyme and saute 1 more minute.
- Add broth, water, split peas, salt, pepper, and bay leaf and mix well.
- Pressure cook on high for 8 minutes.
- Let sit / natural release for 10 minutes, then stir.
This turned out great. I tried reducing the amount of salt but unfortunately found that it really did need the salt. I also added more pepper and that was better as well.
