Brew 65 – Cider

  • 2 gallons of Meijer apple juice (4x64oz), not from concentrate
  • 2 campden tablets
  • 2021-02-28
    • Cleaned and sanitized small carboy
    • Poured in apple juice
    • Crushed 2x campden tablets and poured in juice
    • Put stopper in place and swirled around to dissolve the campden tablets
  • 2021-03-07
    • Poured juice to pot
    • Heated to 85F
    • Added 2 lb brown sugar and stirred to dissolve
    • Boiled ~1/2 c water and added 1/4 t yeast nutrient
    • Added yeast nutrient mixture to juice pot
    • Added 1 t pectic enzyme to juice pot
    • Pitched cider yeast (cider house select premium cider yeast by brewer’s best) in juice pot
    • Racked back into carboy
    • Fitted air lock

    • Observed fermentation occurring with bubbles forming in cider and escaping through air lock!

    • Transferred and added 2 cinnamon sticks
  • 2021-04-11
    • Kegged
    • FG: 0.99 at 68F
