Brew 21 – Diplodocus (Double IPA)

Mostly the same as #15 but with no Cara-Pils steeped grains and a different yeast.

  • Steeped Grains
    • 1.0 lb Crystal 30L
  • Sugars
    • 9.0 lb Extra Pale (Pilsen) Malt Extract
    • 2.0 lb Table Sugar (Sucrose)
  • Hops
    • 75 min: 1.0 oz Summit
    • 20 min: 1.0 oz Simcoe
    • 10 min: 1.0 oz Summit
    • 5 min: 1.0 oz Simcoe
    • 5 min: 1.0 oz Amarillo
    • Dry hopped in secondary: 2.0 oz Summit, 2.0 oz Simcoe
  • Misc
    • 10 min: Irish Moss
  • Yeast
    • Safale S-04 Dry Ale Yeast

Use the larger primary bucket with this once since it always makes a lot of foam during fermentation. After ~17 hours this baby was fermenting very quickly. I had just over 5.5 gallons in my bucket and there must not have been enough head room since foam started leaking out through the airlock. I split it up into two separate buckets to complete primary fermentation.

  • OG: 1.078 @ 75
  • FG: 1.013 @ 68
  • ABV: 8.7%
